Tropical Christmas Cake

 1 oz cup flour
 8 oz margarine or butter
 8 oz sugar
 7 eggs
 1 lb raisins
 1 tsp sugar
 0.50 tsp mixed spice
 0.25 tlbs salt
 4 oz mixed peel
 4 oz cherries
 0.50 lb prunes (chopped)
 1 cup wine/ brandy
 1 tsp baking powder
 1 tsp Hi-Lo vanilla
 Finely grated rind of 1 lime/ lemon
 1 tbsp Hi-Lo Browning

Cream butter, sugar and Hi-Lo Browning until soft and fluffy.

Sieve all dry ingredients together, beat eggs, wine/ brandy together.

Add egg mixture to creamed butter and sugar, add fruits.

Add flour and fold in.

Do not over- beat when mixing, bake at 350f for 1.5 hours.
