Tropical Christmas Cake

Ingredients

  • 6 oz. or 1.5 cup flour
  • 8 oz. margarine or butter
  • 8 oz. sugar
  • 4 eggs
  • 1 lbs raisins
  • 1 tsp sugar
  • 0.5 tsp mixed spice
  • 0.25 tlbs salt
  • 4 oz. mixed peel
  • 4 oz. cherries
  • 0.5 lbs prunes (chopped)
  • 1 cup wine/ brandy
  • 1 tsp baking powder
  • 1 tsp Hi-Lo vanilla
  • Finely grated rind of 1 lime/ lemon
  • 2 tbsp. Hi-Lo Browning

Directions

  1. Cream butter, sugar and Hi-Lo Browning until soft and fluffy.
  2. Sieve all dry ingredients together, beat eggs, wine/ brandy together.
  3. Add egg mixture to creamed butter and sugar, add fruits.
  4. Add flour and fold in.
  5. Do not over- beat when mixing, bake at 350f for 1.5 hours.
